Easy to make but absolutely amazing! The classic potato salad is always loved by everyone, especially in this version enriched with herbs.
The potatoes are boiled and then seasoned with oil, parsley and herbs. They’ll be perfect to side many dishes.
Let’s see how to prepare it!
- 1 kg of potatoes
- 15 g of basil
- 15 g of parsley
- extra virgin olive oil to taste
- vinegar to taste
Wash the potatoes in order to remove any dirt on them. Cook the potatoes in a pan with boiling salt water for about 40 minutes or until fork tender. Choose potatoes of the same size so you’ll get a perfect result.
One cooked, peel the potatoes and put them in a small bowl. Cut in cubes of the size you prefer. If you’re using small potatoes, cut them in half.
Wash the basil and add it to the potatoes together with some chopped parsley, vinegar and extra virgin olive oil in order to form a smooth emulsion. Season to taste the potatoes.
Add salt and pepper to taste and add some oregano. Leave to stand for 30 minutes to allow the potatoes to absorb all the flavors. Serve the potato salad warm or at room temperature.
Store the classic potato salad in the fridge for up to 2 days. Leave it at room temperature before serving it again.
Add the herbs you prefer to season the salad.
