Easy and original, these mini eggplant pizzas are made with few ingredients and in under 30 minutes.
Eggplant slices are topped with tomato sauce, mozzarella and basil: a delicious side dish, perfect for children and grownups. If you prefer, you can enrich the recipe, adding ham of bacon, for example or vegetables. You’ll always get a perfect dish!
- 1 Eggplant
- tomato sauce to taste
- 200 g of mozzarella
- salt to taste
- grated parmesan to taste
- oregano to taste
- basil to taste
- olive oil
Wash the eggplant and cut into slices. Sprinkle them with the coarse salt and let sit for about 10-15 minutes. Preheat oven at 356°F.
Arrange the eggplant slices on a baking sheet lined with baking paper and brush with some olive oil. Bake for 35 minutes. Timing varies according to the thickness of the slices.
Once cooked, add some tomato sauce, mozzarella and grated Parmesan on each eggplant slice. Sprinkle with oregano.
Bake for 10 minutes or until mozzarella is fully melted. Serve warm with basil.
Mini eggplant pizzas can be stored for up to 1 day in the fridge. Bake them for 10 minutes before serving again.
