The crispy eggplant with Parmesan cheese is a delicious and very particular side dish, perfect to serve to your guests to accompany second courses of both meat and fish.
Their preparation is really fast but the result will be really good even for the little ones who usually do not love vegetables very much. The crunchy breading and the presence of the cheese make this dish really delicious and very good, even for rustic appetizers.

- 2 eggplants
- ¼ cup Parmigiano Reggiano
- ¼ cup breadcrumbs
- extra virgin olive oil, to taste
- salt, to taste
- pepper, to taste
- parsley, to taste
Start with the eggplants; deprive them of the two ends and reduce them into slices of about half a centimeter thick.
The thickness of the slices is very important for a very crunchy result. A slice too thick, in fact, would be not very crisp. Then decide the thickness based on the result you want to achieve.
In a bowl put together the breadcrumbs, Parmesan cheese, salt, pepper and parsley finely chopped. Pass each slice of eggplant first into the oil and then into the freshly made mixture. Beat with your hands so as to completely spread the whole surface of your slices and have a very uniform result.
Place your slices on a baking sheet lined with baking paper and bake in a preheated oven at 400°F for about 35 minutes. Once ready, serve your eggplant au gratin with Parmesan hot to your guests.
If you wish, however, you can also serve them at room temperature. They will still be very good and will really conquer everyone.
The crispy eggplant with Parmesan cheese is excellent to be eaten very hot immediately after their cooking; store them for a couple of days in an airtight container. Warm up them before to serve them to your guests again.
Sprinkle with extra virgin olive oil and put them in the oven in order to make them crunchy again like when you have baked them. If you heat them in microwave, however, you will lose their crispness and the outer breading will soften. The result will be a bit different but the taste will always be great and will still be much appreciated by everyone.
