A simple and tasty dish, perfect in every moment of the day, even in those less usual to satisfy a sudden desire or just for a moment of joy with friends.
A plate of spaghetti with garlic, oil and chilli will be perfect for an informal occasion but it will also be ideal as a quick lunch for those who do not have much time to prepare meals or simply prefer simple and traditional flavors.
- 400 g of spaghetti
- extra virgin olive oil to taste
- 4 cloves of garlic
- salt to taste
- hot pepper to taste
- breadcrumbs to taste
- parsley to taste
Start from the sauce. Take the garlic cloves, peel and chop very finely, using if you prefer the appropriate tool.
After this, put it in a saucepan with extra virgin olive oil and cook for a few minutes. The amount of oil must be quite abundant because it will be the main seasoning of your dish.
In the meantime, wash the parsley and then chop it very finely with a knife. Add the pepper to the oil and then the parsley. Add more extra virgin olive oil if necessary.
At this point, heat up plenty of salted water inside a pot and bring to a boil to cook the spaghetti. These must be drained al dente because they will then be re-stirred in the pan along with the seasoning just prepared.
Brown the breadcrumbs in a non – stick pan along with extra virgin olive oil. Let it cook a couple of minutes or until the breadcrumbs are golden. Choose according to your taste how to toast the breadcrumbs.
At this point drain the pasta and season with the sauce. Blow it up for about a minute, adding more oil if necessary. Serve, then, your pasta with garlic and chilli pepper with a sprinkling of toasted breadcrumbs. The amount of breadcrumbs can vary according to your tastes and those of your guests.
It is a very classic and traditional dish that however can always be brought to the table in a different way, for example by measuring the crunchiness with a greater or less quantity of breadcrumbs or adding more or less hot pepper for a spicy result at the right point.
Eat the spaghetti immediately after having prepared them.
To make the condiment even greener, add a handful of desalted capers or anchovies, for example. You can also flavor the breadcrumbs adding a pinch of tomato paste to give a more intense color note to the dish.
