Ham and cheese eggplant rolls are a perfect dish to serve to your family. They are perfect for those who usually haven’t time enough to cook.
Slices of eggplant cooked in the oven are stuffed with ham and cheese. The dish will appeal to children too.
- 2 eggplants
- 150 g ham
- 150 g scamorza cheese
- Extra virgin olive oil to taste
- Salt to taste
Cut the eggplant into slices of the same thickness. This operation is very important for the success of your dish.
Sprinkle them with salt and let rest for half an hour. Remove the salt, pass the eggplant slices in the oil and then in the breadcrumbs.
Crush with your hands to make the breadcrumbs stick.
Put them on a baking tray previously lined with baking paper and cook in preheated oven at 356°F for about 20 minutes.
Turn them at halfway through cooking to have homogeneous cooking, well-browned and well-cooked.
Add ham and cheese on each eggplant slice. Wrap to form the rolls and place on a baking sheet.
Cook in a preheated oven at 356°F for 10 minutes. Serve warm and enjoy.
Store the ham and cheese eggplant rolls for up to 2 days in the fridge in an airtight container. Use bacon and cheddar cheese for a more intense flavor.
Fry the eggplant slices, let them cool at room temperature and then fill with ham and cheese. Bake for 10 minutes to let cheese melt and enjoy.
