Chicago-Style Deep Dish Pizza

Ingredients for the pizza crust

  • 2 cups all-purpose flour
  • 1/4 cup cornmeal
  • 1 teaspoon salt
  • 1/2 tablespoon sugar
  • 1 and 1/2 teaspoon yeast
  • 1 cup warm water
  • 1/4 cup salted butter
  • olive oil for coating

For the tomato sauce

  • 1 onion
  • salt
  • oregano
  • 2 cloves of garlic
  • 1 tablespoon unsalted butter
  • 300 g crushed tomatoes

For topping

  • 3 cups mozzarella cheese
  • 1/2 cup grated parmesan cheese

Chicago-Style Deep Dish Pizza

Directions

First of all, make the pizza crust. Combine cornmeal, salt, sugar, flour and yeast in a bowl. Add warm water and melted butter and make a compact dough.

Make sure the water is not too hot because otherwise you will kill the yeast.

If the dough is too hard add some warm water; if it looks too soft add some flour.

Let it rise in a warm environment, covered with aluminum foil, for 2 hours or until double in size.

When the dough is ready, remove it from the bowl and punch it down to remove any air bubbles. Roll it and spread it with some melted butter.  Put it in a bowl and let it rise or one hour in the refrigerator.

It’s time to make the sauce. Place butter in a saucepan and let it melt. Add grated onion and let it brown for about 5 minutes. Add salt, oregano, garlic and tomatoes. Let cook for 30 minutes. let it cool.

Preheat oven to 425°F. Roll the dough out and place it over a deep dish cake pan. Press the dough into the pan using your fingers. Brush the edges of the dough with some olive oil and fill with the mozzarella cheese.  Add the tomato sauce and sprinkle with grated Parmesan Cheese.

Bake the deep dish pizza for 30 minutes or until golden brown. Let it cool for 10 minutes and serve it still warm.

Tips

Use the cheese you prefer instead of mozzarella cheese. You can let the dough to rise overnight in the fridge if you need it.

The Chicago-style deep dish pizza can be stored for a couple of days. Freeze it before baking.
