The broccoli and potato croquettes are an excellent dish, which can also be served as an appetizer, especially if you form little balls.
An extremely simple recipe, made with poor and inexpensive ingredients but that will allow you to serve a dish always different.
There are many possible variations, since you can change the type of cheese used for the filling or you can also enrich with proteins, such as cooked ham.
Let’s see together how to prepare excellent broccoli and potato croquettes.
- 500 g broccoli
- 500 g potatoes
- 1 egg
- ⅓ cup Parmesan cheese
- salt, to taste
- 200 g cheese
- extra virgin olive oil
Reduce the broccoli to peaks and wash them carefully and boil in plenty of salt water for about 15-20 minutes.
Wash the potatoes carefully so as to remove any dirt then cook them for about 40 minutes in hot salt water. To reduce cooking times, cook the potatoes in the microwave.
As soon as the broccoli and the potatoes are ready, add them in a bowl together with the other ingredients: eggs, cheese and a pinch of salt. Mix everything using a fork and crush the broccoli well so as to obtain a puree perfectly homogeneous and well compact.
If the mixture is still too soft, add some tablespoons of breadcrumbs until you have a compact consistency and no longer moist.
Take a handful of dough and flatten it on the palm of your hand.
Add on it the cheese cubes and fold the mixture so as to incorporate the cheese perfectly. Roll the mixture between the hands to form the croquette.
Pass in breadcrumbs and place it on a baking sheet previously lined with parchment paper. Sprinkle with extra virgin olive oil and, if you wish, add salt.
Bake in a preheated oven at 392°F for about 15 minutes. Once golden, serve hot.
Store the broccoli and potato croquettes for a maximum of a couple of days in an airtight container and place them in the refrigerator.
Heat them before serving again.
