M&M’s Swiss Roll

The M&M’s swiss Roll is a very colorful and cheerful dessert perfect for birthday or carnival parties or for events in which children are protagonists. In fact, children particularly love M&M’s for their cheerful color and their truly irresistible taste.

Added to the filling with mascarpone and whipped cream they make a really irresistible dessert not only for the little ones but also for the older ones.

Ingredients for the sponge sheet cake

  • 4 eggs
  • 3/4 cups sugar
  • 3 tablespoons potato starch
  • 3 tablespoons 00 flour
  • 1 teaspoon baking powder

For filling

  • 1 cup mascarpone
  • 2 tablespoons whipped cream
  • 2 tablespoons sugar
  • M&M’s

For decoration

  • dark chocolate

Directions

Add the mascarpone, a couple of tablespoons of whipped cream and sugar into a bowl. Work with a hand whisk or a fork so as to mix well all the ingredients. Add the M&M’s and mix to incorporate them perfectly to the cream. Put in the fridge and prepare the sponge sheet cake.

Separate the yolks from the egg whites. Mix the first with sugar to form a well-aerated mixture.

Gradually add the previously sifted flour and potato flour so as to avoid the formation of lumps.

Whisk the egg whites and add them to the mixture with very delicate movements. Add also half a teaspoon of baking powder and transfer the mixture on a baking sheet previously lined with baking paper.

Put in the oven to cook at 428°F for about 7 minutes or until it starts to be just golden on the surface.

Sponge sweet cake

Turn over the cake on a sheet of baking paper and remove the paper used for cooking. Sprinkle the surface with some sugar and wrap the sheet cake and let it cool.

Stuffing

Stuff it with the cream prepared before and level it over the entire surface. Wrap the sponge sheet cake to form the roll, cut the two ends.

Take the dark chocolate, chop it coarsely with the knife and let it melt in a bain-marie or for a few seconds in the microwave.

When it is well melted and fluid, pour it onto the surface of the roll and then decorate with colored M&M’s.
