Luna Park pancakes

Luna Park pancakes are simple and quick to make, perfect during the carnival period but also to enjoy with your family throughout the year.

Fried sweet pancakes, made even more delicious by sugar that can be sprinkled on the surface. Perfect preparation for a tasty snack to be shared with the little ones.

The particular name of these pancakes is due to the fact that they are often sold by street vendors in the amusement parks, the amusement park that the little ones love so much.


  • 3 and 1/3 cups 0 flour
  • 2 tbsp yeast
  • 1/3 cup sugar
  • ½ cup butter
  • 1 cup milk
  • 1 teaspoon salt
  • 1 packet of vanilla
  • lemon zest to taste

Leave the butter at room temperature for at least an hour so that it is soft. In a bowl, mix the milk, sugar, yeast and lemon zest together.

Mix and pour the mixture into the planetary and add the flour a little at a time. It is important to sieve the flour so as to avoid the clumping function and have a final mixture that is smooth. When the flour has been incorporated into the mixture, add also the seeds of a vanilla bean.

Keep on working and add salt as well. Continue to work to obtain a very soft and elastic dough and transfer it inside a bowl, sprinkle with seed oil and leave to rise for about two hours until it has doubled its initial volume.

After this time, take your dough and divide it into many pieces of about 2,83 oz each. Form the balls and place them on a baking sheet covering with a cloth and let rise for another hour inside the oven off but with the light on. Take back your balls, work them so as to make them flat and circular and fry in plenty of oil at about 325°F.

It is important that the oil is not too hot because otherwise your pancakes would remain raw inside and would darken out too quickly. It is important, therefore, to use a food thermometer or to make a test by frying a small piece of dough. If the pasta becomes golden too quickly it will be a sign that the oil is still too hot.

Once fried, spread well the Luna Park pancakes, still hot, with granulated sugar on the whole surface. You will serve with this recipe pancakes simple and fast, delicious and perfect even for the little ones, who will not resist their external crispness and internal softness but also the sugar that usually covers them. If you prefer, you can also omit it.


Store the Luna Park pancakes for a few hours at most from their preparation so as to remain very soft and delicious to consume.
