Lemon brownies are very fragrant, soft, easy and quick to prepare sweets. The ingredients needed are few and above all they are present in our handouts. The final result will be very special and different from the usual. It is an alternative to the classic chocolate brownies that make the whole world go crazy.
This lemon version will be perfect in spring but also in summer and will be an excellent idea for breakfast or a snack during the day.
So let’s see how to prepare excellent lemon brownies and some useful tips to further enrich this already delicious dessert.
- 2 eggs
- 1 cup 00 flour
- 1/2 cup butter
- zest of 2 lemons
- juice of 2 lemons
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1 and ½ tablespoons limoncello
- powdered sugar
Work the butter and the sugar together. It is important that the butter is at room temperature and therefore well workable.
Once you have a cream, add the eggs, one at a time and even these at room temperature.
Add the lemon juice and zest and gradually the flour, added a little at a time so as to give the mixture time enough to absorb it properly. Add also the limoncello and finally the baking powder.
Transfer the mixture into a previously greased and covered with baking paper rectangular baking pan.
Level the mixture and bake in a preheated oven at 356°F for about 15 minutes. Always make the toothpick test before turning out the cake to make sure that the cake is perfectly cooked.
Once very cold, your dessert will be divided into squares and served with a sprinkle of sugar.
Store the lemon brownies for up to 2-3 days under a glass jar or inside an airtight container.
