This recipe is an original starter, perfect for the buffet of a party.
It can be prepared in many different versions and can also be served at room temperature. Use the filling you prefer to serve this tart in several versions.
Let’s see, therefore, how to prepare excellent sunflower spinach and ricotta puff pastry tart.
- 2 rolls of pate brisée
- 1 kg spinaches
- 1 and 1/2 cups ricotta cheese
- 1 egg
- 1/2 cup parmesan cheese
- 1 egg yolk
- 1 tbsp milk
- poppy seeds to taste
Start cooking spinaches. Boil them in salted water for about 15-20 minutes. Once ready carefully squeeze them so as to eliminate all the water in excess. After that, squeeze the ricotta cheese to eliminate excess liquids.
Once cold, place the spinaches in a bowl with the ricotta cheese, grated Parmesan cheese and salt.
Then move on to the realization of your sunflower. Take the first roll of pate brisée and open it on the work surface. Place a cup in the middle of the pastry so as to draw a circle in which you will place the filling.
Now add the filling on the outside of your pastry, keeping it at about 1 cm from the edge in order to allow the overlapping of the second roll of pastry.
Then take the second roll, open it and lay it on the first stuffed roll.
First, arrange it so that the ends coincide and then take the cup back to its original use and place it in the middle, exactly in the same place as before. Using the tines of a fork, seal the edges.
Divide the circle into four parts and then divide each part into four segments. Continue this way until you have reduced all the dough into equal slices.
At this point just rotate each segment. Continue this way until you have finished this operation. In a bowl, put an egg yolk and a tablespoon of milk. Brush the whole surface of your sunflower.
Now use the poppy seeds to garnish the central area of your sunflower. The sunflower is ready to be placed in a preheated oven at 356°F for about 25 minutes or until it is golden on the surface. Serve hot.
The Sunflower spinach and ricotta brisée tart can be stored for one day in an airtight container or covered with transparent film.
You can also fill with other vegetables and cheeses of your choice.
