- 1 kg potatoes
- 2 eggs
- 1/ cup parmesan cheese
- parsley to taste
- 1 cup ham
- salt to taste
- 3/4 cup provola cheese
- white flour to taste

Wash potatoes and simmer them in salted water until they are fork tender.
Once cooked, potatoes should be drained and mashed with the special tool so as to be reduced to a puree.
Transfer into a bowl and gradually add all the ingredients necessary for the base dough: eggs, grated Parmesan cheese, chopped parsley, salt and ham strips.
Mix everything well with a fork. Then take a spoonful of dough, flatten it on the palm of a hand and add a little piece of provola cheese.
Wrap the dough around the piece of provola and shape it as a croquette. Repeat the passage for all your stuffed croquettes.
Place white flour in a dish, beat the eggs in a bowl and arrange breadcrumbs in another dish. Your stuffed potato croquettes must first be dipped in the flour, then in the beaten egg and finally in the breadcrumbs.
Croquettes can now be cooked in hot seed oil or baked at 180°F for about 25 minutes. Turn croquettes halfway through cooking so they have a perfectly homogeneous golding. Serve them warm.
