- 300 g potatoes
- 150 g mozzarella cheese
- 80 g mushrooms
- 1 clove of garlic
- extra virgin olive oil
- parmesan cheese
- salt and pepper to taste
Start from the potatoes that you will need to make the baskets. Peel, wash and dry them. This done, using a mandoline, you must make very thin slices.
The thickness is very important for the outcome of your potato baskets. Add the slices in a large bowl, sprinkled with plenty of extra virgin olive oil, salt and grated Parmesan cheese.
Now take a muffin mold, sprinkle with melted butter and place the potato slices inside so as to cover the bottom and the walls. After that, put everything in a preheated oven at 356°F for about 25 minutes.
When the baskets are almost ready, add the mozzarella cubes and mushrooms filling, that you have in the meantime passed in a pan with extra virgin olive oil and a clove of garlic and adjusted with salt and pepper. Be careful not to exceed with filling quantities.
Put your potato baskets stuffed in the oven at 392°F for about 5 minutes, until the mozzarella melts perfectly. Once ready, take out your potato baskets and serve them with chopped parsley and a leaf for garnish.
