Potato nests with ham and mozzarella are an excellent idea for a particular and original appetizer.
It is a dish very versatile to serve in many different variations, filling with vegetables or different types of cheese.
So, let’s see together how to prepare excellent potato nests with ham and mozzarella.
- 1 kg potatoes
- 3 egg yolks
- 1/3 cup butter
- 1/2 cup Parmesan cheese
- salt to taste
- 150 g mozzarella
- 60 g of cooked ham
Start from the mixture to form the nests. Wash the potatoes and boil them for about 40 minutes in salt water. For homogeneous cooking, choose potatoes of the same size.
Once ready, crush the potatoes with the appropriate tool and put the purée into a bowl.
Add the egg yolks, the butter, previously melted, cheese and salt. Mix well so as to obtain a perfectly smooth and creamy mixture.
Pour the mixture into a sac à poche. Take a baking tray, cover it with baking paper. Use a food ring mold to draw on the paper some discs. This is useful to create nests of the same size and shape.
Turn the sheet of baking paper. Follow the traces previously drawn, to make a disc with the mixture placed in the sac à poche. Make the edge of your nest. Repeat twice so as to give height to your nests.
Place your nests in a preheated oven at 374°F for about 15 minutes or until they are golden brown. Bake your potato nests and stuff them with some ham and mozzarella.
Put back in the oven at 176°F for another 10 minutes or until the mozzarella has melted perfectly. Serve warm.
Store the nests for a maximum of a couple of days in the fridge inside an airtight container.
Use more or less quantity of cheese to prepare the mixture and use the filling that you like most.
